Macaroni cheese is always a winner at my house and nothing beats homemade cheese sauce, but sometimes there’s no time to make a roux and then there’s all the washing up , so here’s a really quick simple version all made in one pot.
I wouldn’t normally use measurements for Mac and Cheese but they’re necessary for this one. If you don’t have the right ratio then it could all go to pot!!
The quantities below serve a family of 7
Macaroni (500g bag)
Whole milk (3cups)
Water (2 3/4cups)
Salt and pepper
If you are going to bake it preheat your oven (I don’t always bake it).
Put macaroni, milk, water, salt and pepper in a pan and heat on a medium heat, until it starts to simmer.Stir occasionally so the macaroni doesn’t stick.
Once simmering turn the heat down low and stir continuously until the macaroni has absorbed all the liquid and is cooked through.(You can always add a little water if it’s drying out to quickly, but if the heat is low enough it should be fine).
Turn off the heat. Add spring onions and paprika.
Gradually stir in the cheese until melted.
Serve immediately unless you want to put it in the oven to bake…
If you do bake it… Once golden on top serve and enjoy!!
